Simple Pleasures

Now that I have a kitchen I feel like I should be fancy and cook fancy things all the time. But I'm still a college student - I don't have time for that. Which is why I'm always especially happy when I can figure out something quick and simple that also tastes really good.

For lunch today, I took our leftover Boboli crust from Wednesday night when we had individual pizzas and since my friend Andrew had eaten the rest of the sauce out of the can with a spoon (ew) I had to improvise. Drawing inspiration from my childhood favorite, the bianca (white) pizza at a restaurant my family frequents at home, I made my own version. I spread the crust with olive oil and topped it with mozzarella, pre-cooked chicken, garlic powder and Parmesan. In the oven for eight minutes and when it came out I swear I was in heaven. I cut it into quarters and ate three for lunch and the fourth for a midnight snack. Mmm.
